At Schloss Freudenstein, breakfast is pure poetry. Take a seat in the castle’s panoramic garden, and enjoy the view of the Dolomites and the Etschtal valley as you indulge with the food of your choice. Options range from fresh fruit to cakes and from coffee to Spumante, including a selection of dainty appetisers – sometimes caprese, sometimes vitello tonnato. True to the “no waste” philosophy that informs our new chef Danilo D’Ambra, the foods that are not touched during breakfast are later delivered to the fridges in the rooms and suites as snacks.

Danilo D’Ambra combines the flavours of his homeland Campania with traditional South Tyrolean cuisine to create fine gourmet recipes that excite modern taste buds. His inspiring dishes can be enjoyed either à la carte or as part of a surprise menu. Taste his risotto with paprika, vanilla and yogurt, followed by beef rib with chard, chickpeas and port wine jus or Danilo’s signature vegetarian highlight with aubergines. His delicate lemon tart rounds off the experience with a fresh, classy touch.
