At Schloss Freudenstein, breakfast is pure poetry. Take a seat in the castle’s panoramic garden, and enjoy the view of the Dolomites and the Etschtal valley as you indulge with the food of your choice. Options range from fresh fruit to cakes and from coffee to Spumante, including a selection of dainty appetisers – sometimes caprese, sometimes vitello tonnato.

Delight made light

Danilo D’Ambra combines the flavours of his homeland Campania with traditional South Tyrolean cuisine to create fine gourmet recipes that excite modern taste buds. His inspiring dishes can be enjoyed either à la carte or as part of a surprise menu. Taste his risotto with paprika, vanilla and yogurt, followed by beef rib with chard, chickpeas and port wine jus or Danilo’s signature vegetarian highlight with aubergines. His delicate lemon tart rounds off the experience with a fresh, classy touch. The ingredients used in our kitchen grow in the nursery on the castle grounds. The fish and meat are processed into culinary masterpieces according to a nose-to-tail ethical approach.
